If you missed the opportunity to bond over salsa and tortilla chips on September 13, you can still get in on the fun by making your own at home with the recipe
below.

Sue’s Salsa

22 medium tomatoes (16-20 cups)     ¾ cup sugar
5 large onions                                         ¼ cup canning salt
7 jalapeno peppers                                 1 cup white vinegar
2 green peppers                                      1 cup tomato paste
6 cloves of garlic

Directions

Dice the tomatoes, onions, and peppers. Mince the garlic.  Place in a pot and simmer 30-40 minutes. Add sugar, canning salt, white vinegar, and tomato paste. Stir well to combine. Simmer again for 30-40 minutes. Keep in refrigerator. For long-term storage, place in pint jars leaving a ½-inch headspace. Process in a water bath for 20 minutes. Makes about 10 pints.
